Il Cardhu è un single malt dello speyside tra i più Venduti al mondo, e soprattutto in Spagna, rappresenta un vero mito.

Adriano aprirà la serata con un delizioso cocktail,Quindi intriganti abbinamenti con i migliori

Prosciutti italiani e con il famoso jamon de bellota (pata negra). Seguiranno due piatti ispirati alla cucina iberica.

CARDHU 12 - 2012

COLOUR: gold.
NOSE: toasted bread, vanilla, brioche, a lime honey, roasted nuts, malt and that's it . Certainly not unpleasant, and certainly very easy. Also a little maple syrup.
MOUTH: easy and light, honeyed, with overripe apples, quite some malt and the same touches of toasted brioche. Add a few aisins (rather mnscaty, those raisins) and yon have it . Doesn't feel weak at 40% vol., which is obviously good news.
FINISH: qnite short, more on tea and caramel. A little chocolate.

CARDHU 12 - 2003

COLOUR: straw.
NOSE: certainly from the same family' but simpler and grainier, without these nice Duky tones we had in its older siblings. Apple skins, porridge, cereals, praline, vanilla creme... Something a little farmy in the backgronnd. Gentle but less complex, uncomplicated but enjoyable.
MOUTH: now it's completely different, I guess the other distilleries start to show off. Something slightly waxy and smoky mixed with sweet toffee and notes of cappuccino at the attack, but the middle is sort of weak and curiously papery despite a certain oiliness.
FINISH: is bolder again, more satisfying and rather coating, with something funny' persisting (olive oil? Hazelnnt oil?) and finally a little fruit (figs).

CARDHU 12 - 2006

COLOUR: Burnished
NOSE: Some fruit on the nose here - what is it? Apples? Pears?
TASTE: Nice clean sweet malt and barley- Uncluttered - nothing much else than the malt and barley, but that is so pure. Mouthwatering and juicy
FINISH: Quite a long malt finish

COMMENTS: If I wanted just pure malt and barley with no complications - this is it . I don't understand why Cardhu gets such dire responses. It was my introduction to single mails back in the late 70's and t still stands up well today. (I never had the "Pure Mair'  vatting mind.)

CARDHU 12 - 2011

COLOUR: full gold.
NOSE: frankly, this smells like a good blend. Rather light, a little malty, a little earthy, a little honeyed, a lime toasted/roasted and even a lime smoky. And I quite like these notes of roasted pecans and fresh potty. It's all very light but, as they say, it's quite pleasant'.
MOUTH: light but, again, pleasant'. Orange and honey cake, a little gingerbread, earl grey tea, roasted nuts, Ovaltine (aka Ovomaltine in France) and just hints of sweet beer. Again, it's rather blendish' than malty' but it's perfectly honest whisky in my opinion.
FINISH: short but very clean and even fresh, on sweet gingerbread. Touches of cloves in the aftertaste.

CARDHU 18 - 2011

COLOUR: full gold.
NOSE: other territories here, there's much more happening, and much more individnality, although it is light whisky again on the nose. Starts with notes of Cointrean and vanilla cream, develops more on floral notes (orange blossom) and keeps going on with a little coffee, fudge and toffee. Mnch more aromatic globally than the 15.
MOUTH: again, this baby has nothing to do with the 15 (and all the more the 12). Good body and appealing malty/honeyed sweetness, with a development on orange cake and liquorice and a faint earthiness that brings it more complexity. Some black tea as well.
FINISH: short to medium, clean, with more caramel and herbal teas. Aniseed ? The aftertaste is rather peppery

CARDHU -  1973  - 27 YO

COLOUR: pale gold.
NOSE: bigger of course than the new ones, as well as more complex, but there's the same distillery character (nuttiness and maltiness plus whiffs of smoke). Develops on hints of olive oil, linseed oil and smoked ham as well as a little nougat, getting more honeyed after that (acacia). And is this lipstick ? Much less mundane' than other Cardhus. With water: and unusual farminess, notes of patchouli, wet newspaper, wet hay... Very good surprise.
MOUTH: (neat): powerful, very fruity with this enjoyable oiliness. Also notes of Rower cordial (mullein), apple jelly... With water: it got maltier and, to tell you the truth, bigger than when neat. More grassy notes, a little wax, cider apples, ginger, white peaches... Good!
FINISH: long, balanced but assertive even if slightly middle-of-the-roadish now.

Cardhu Distillery

   

Cardhu - la roccia nera - è stata fondata nel 1824 dall'ex-contrabbandiere John Cumming ed e situata Sulla Mannoch Hill che domina dall'alto il fiume Spey. La distilleria nacque come fattoria stagionale e quindi la produzione veniva effettuata solo dopo ogni mietitura. Dopo la scomparsa di John la Cardhu fu gestita dalla moglie Helen che usava vendere dalla finestra le bottiglie ai passanti. Negli anni a seguire subentrarono i figli e nipoti. Dopo una grande ristrutturazione, la maggior parte del prodotto veniva venduto alla Johnnie Walker che nel 1893 decise di acquistarla. Oggi, dopo ulteriori ampliamenti appartiene ancora a Diageo. Il Cardhu 12 yo e da molti anni uno dei più venduti single malt, anche se recentemente uscito dalla top ten. Nel 2003, a causa della carenza di scorte, Diageo ha combinato una birichinata . . . che poi vi racconto ! II range di prodotti presenti sul mercato si è notevolmente allargato negli ultimi anni : nel 2011 sono stati lanciati il 15 yo ed il 18 yo per i mercati francese e spagnolo; nel 2014 sono comparsi Amber Rock' e Gold Reserve senza indicazione di età. Le edizioni speciali sono state molto scarse ed una di queste rarità, la Rare Malts Selection del 1973 ed imbottigliata nel 2000 sarà la chicca finale di questa serata : 27 anni e 60.02 % !!
